I also tried to relive this eggplant cooked in mango dish that I tasted in Malaysia. The only reason I decided to do that was because we had these butter toffee-flavored almonds which no one liked and I thought of this dish to top it off with. Anyway, it wasn’t such a success though. Or maybe because it was too sweet for the squash risotto, which was already a bit sweet in itself. Anyway, as my dad said, the squash risotto would have been best with steak.
